Ingredients

Beef 1 kg
·
Bone marrow 2
·
Goat brain 1
·
Sliced Onion 1
·
Chopped onion 1
·
Cloves 4
·
Garam masala 1 tsp
·
Refined flour 1 tsp
·
Gram flour(besan) 2 tsp
·
Coriander powder 2 tsp
·
Garlic paste 2 tsp
·
Red chili powder 1 tsp
·
Turmeric powder 1 tsp
·
Ginger paste 2" piece
·
Yogurt 1 cup
·
Black cardamom 2
·
Green cardamom(powdered) 4
·
Saffron A few strands
·
Aniseed (powdered) 8 gram
·
Lemon juice 1 tbsp
·
Green coriander 4 tbsp
·
Cooking oil As required
·
Cinnamon 2 sticks
·
Ginger powder 1 tsp
·
Salt to taste
Method
1. Heat the oil in a pan and add
onions and fry it until onions become ,slightly brown.
2. Add beef and salt, red chili
powder, cardamoms and cloves.
3. When the liquid has evaporated,
add the coriander powder, turmeric powder, garlic paste, ginger paste, saute until
the oil separates.
4- Add goat brain and fry.
5. Add the yogurt and boil the
mixture. Reduce the heat to medium and cook for 20 minutes.
6. Add three cups of water and bring
the mixture to the boil. Cover the mixture and stir it regularly after some
time. Cook the mixture until the beef becomes tender. Now remove the beef from the mixture and keep it aside.

Heat 2 tbsp oil in a pan and add
refined flour and gram flour . saute over low heat.
8 . strain the gravy by using a strainer,
then heat the gravy again and bring it to the boil.
9 . Add the beef, garam masala, aniseed powder, green coriander,
saffron strands and lemon juice. Mix well and cook at low heat for 50 minutes.
Now your delicious Nihari is ready.
Garnish it with green coriander and green chili, and serve it with naan or roti.
