Haleem is a traditional Pakistani dish made of pulses, wheat, barley, garam masala(spices), meat (beef, mutton, or chicken). The unique flavor and thick consistency of Haleem are achieved by cooking it on low heat for 8-9 hours.

Ingredients for Haleem
- Chicken Half kg
- Rice Half cup
- Barley Half cup
- Crushed wheat Half cup
- Red lentil Half cup
- Yellow lentil Half cup
- Split chickpeas Half cup
- Red chili powder 3 tbsp
- Turmeric powder 2 tbsp
- Cumin seed 2 tbsp
- Cloves Half tbsp
- Green cardamom 3
- Bay leaf 5
- Ginger paste 2 tbsp
- Garlic 2 tbsp
- Onions 3 medium size
- Oil 1 cup
- Water 4 liters
Ingredients for tempering
- Oil Half cup
- Cumin seeds 1 tbsp
- Bay leaf 2
- Onion finely chopped 1
Ingredients for garnishing
- Mint leaves Chopped half cup
- Fresh coriander Chopped half cup
- Green chilies Chopped 5
- Sliced ginger As required
Method for making Haleem
- Take a stockpot and add oil. Heat oil for one minute and then add onions into it.
- Fry onions until slightly brown.
- Add meat and cook on a slow flame for five minutes.
- Add ginger-garlic paste and whole spices and cook on medium flame.
- When the mixture leaves the oil, add water with barley, rice, crushed wheat.
- Cook the mixture on low flame until thick consistency forms and all lentils become finally cooked.
- Mash the mixture if required.
Method to prepare tempering mixture
- Take a pan and heat the oil. Add the onions, bay leaf, cumin seeds, and fry until brown.
- Pour tempering mixture over the Haleem and cook for two minutes.
- Your delicious Chicken Haleem is ready. Pour the mixture in a bowl and garnish it with chopped green chilies sliced ginger and mint coriander leaves. Serve with naan or roti.
