  • Pistachios blenched                          3 tsp
  • Saffron                                                1/4 tsp

  • Oil to deep fry
  • Water to make the dough

  • Water                                                1 cup
  • Sugar                                                1 cup
  • Green cardamom powder             1/4 tsp
  • Rosewater                                       1  1/2 tsp
Method For Making Sugar Syrup
  1. Mix water, sugar and cardamom powder and boil the syrup. When the mixture becomes sticky turn the stove off.
  2. When the mixture turns to a string consistency, add 3 tbsp of water and mix well.
  3. Add rose water and set this mixture aside.
Method for making Gulab Jamun
  1. Mix the khoya(whole milk fudge), milk powder, refined flour, and baking soda. Add a little water and knead the mixture into a smooth dough(add a little more water if required).
  2. Mix the pistachios, saffron and green cardamom powder and make a thick paste.
  3. Add this paste to the dough.
  4. The dough can become sticky so rub some oil on your fingers and start making equal sized balls with the dough. .Keep the balls covered. (Note: The dough should be smooth enough to keep the shape of the balls without having any cracks).
  5. Heat the oil in a pan on a medium flame. Do not overheat the oil otherwise, your gulab jamun balls will become brown without cooking from the inside.
  6. Add the balls to the oil and fry them and keep them stirring on a medium flame until they become golden brown.
  7. When the balls have been thoroughly fried, remove them from the pan and add them to the sugar syrup. Make sure that the sugar syrup is hot(but not too hot).
  8. Leave the balls in sugar syrup for 2-3 hours.
  9. Your delicious Gulab Jamuns are ready. Serve them hot with sugar syrup and enjoy.
