Nankhatai-Easy Homemade Nankhatai Recipe With Semolina
Nankhatai is a traditional Indian sweet and appetizing eggless cookies that can be handily arranged at home. These delicious cookies are very flavorful and melt in the mouth. Nankhatai is prepared with ghee/butter, maida(refined flour), semolina(sooji), gram flour (besan), and sugar. In this easy homemade nankhatai recipe, I have not included gram flour however utilized semolina as it gives a firm and crispy texture to cookies.
Ingredients
- Sugar(powdered) 1/2 cup
- Ghee or butter 1/2 cup
- Refined flour (maida) 1 cup +2 tbsp
- Semolina 2 tbsp
- Baking soda 1/4 tsp
- Green cardamom powder 1/4 tsp
- Salt 1 pinch
Method
Making the dough: Sieve the refined flour in a bowl, add semolina, salt, and baking soda and mix with a spoon.
Put ghee/butter, powdered sugar, green cardamom in another bowl, and beat them well.
When the mixture turns into a creamy form add sieved dry ingredients and make a dough.
Baking the cookies: Preheat the oven to 350-degrees Fahrenheit (180-degrees centigrade). Divide the dough into 20 equal-sized balls. Then slightly flatten and pierce with a fork lightly to make a design. Bake exactly for 10 minutes.
