Bitter gourd curry also known as karela sabzi is a spicy and healthy dish of the subcontinent. It is usually served with roti(bread) or boiled rice. It is one of the most favorite dishes of vegetarians. The spicy and sour taste of this recipe makes it unique among other curry recipes.

Ingredients
Bitter gourd                      1 kg
Baby onions                     12
Tomatoes                         5
Ginger garlic paste         2 tbsp
Turmeric powder            1 tbsp
Red chili powder             1 tbsp
Cumin seed                     1 tbs
Curry leaves                     4
Green chilies                    4
Tamarind pulp                 4 tbsp
Oil                                      Half cup
Salt to taste
Method
Making the bitter gourd ready for cooking: Peel the bitter gourd(karela) properly and slit vertically down the center. Use a spoon to scoop out all the seeds from the center.  Then wash it and dry the extra water.
Cooking the bitter gourd: Take a pan and heat the oil and add curry leaves and cumin seeds and fry them for 5 seconds. Now add bitter gourd and fry for 15 minutes. When the bitter gourd becomes golden brown, add baby onions, ginger garlic paste, red chili powder, turmeric powder,  tomatoes, and fry for 10 minutes on a medium flame. Add tamarind pulp, green chili and mix it well and cover the pan on a slow flame for 20 minutes.
Your bitter gourd curry is ready to serve.
