Gol Gappay, also known as Pani Puri in India, is a round-shaped very crispy puri that is very popular in the Indian Subcontinent. You can make a hole in the puri and fill it with different kinds of stuffing, the most famous being the potato stuffing. Adding sweet and sour chutneys on the top makes Gol Gappay a mouth-watering dish.

INGREDIENTS FOR GOL GAPPAY

  • Semolina                                               1 cup
  • Refined flour(maids)                            1/4 cup
  • Carom seeds                                         1 Pinch                
  • Salt                                                         1 Pinch    

INGREDIENTS FOR GOL GAPPAY FILLING

  • Potatoes                                               4 medium size
  • Tomatoes cut into cubes                   2 medium size
  • Onions sliced                                       3 medium size
  • Yogurt                                                   1 cup
  • Chat masala(spice powder)              2 tbsp

INGREDIENTS FOR GREEN CHUTNEY(SPICES SAUCE) 
  • Mint leaves                                        A half bunch
  • Coriander                                           1 bunch
  • Green chilies                                      5
  • Tomato                                               1 medium size
  • Anar dana(dry pomegranate seeds)   2 tbsp

INGREDIENTS FOR SOUR CHUTNEY
  • Tamarind pulp                                   Half cup
  • Plum pulp                                           Half cup
  • Red chili powder                               1 tbsp
  • Vinegar                                               3 tbsp
  • Brown sugar                                      5 tbsp
  • Salt                                                      Half tsp
METHOD

  1. Mix Semolina and refined flour, salt and carom seeds. Take lukewarm water and make a dough with this mixture.
  2. Keep the dough covered for 1 hour.
  3. Divide the dough into two parts and make a thin roti with a rolling pin. Cut the roti in equal size round shapes. 
  4. Fry the round shapes of dough in oil on a high flame.
  5. Boil the potatoes and cut them into cubes. Add yogurt, chat masala, tomato cubes, and sliced onions into potatoes and mix well. 
  6. Put the mint leaves, coriander, green chilies, tomato, and anardana(dry pomegranate seeds) into a blender, add 1 tbsp of water and blend them. 
  7. Take a pan and put plum and tamarind pulp in it. Add vinegar, red chilies powder, jaggery, and salt and cook them for 5 minutes on a medium flame. When the mixture becomes thick, turn the flame off and cool down the mixture. 
  8. Take the fried Gol Gappay and fill them with the potato mixture. Add some green and brown chutney and serve them.
