Ingredients
Dates (soft Medjool dates) 2 cupsWalnuts, almonds, pistachio 2 cups
Honey 6 tbsp
Lemon juice 3 tbsp
Vanilla extract 1 tsp
Salt 1 pinch
METHOD
Making the Dough: In a food processor, process the dry nuts until crumbly. Add dates and vanilla extract and process them well. Then add honey, salt, and lemon juice and process them for 10 seconds.
Making Date Balls: Remove the dough from the food processor and roll it between your hands to form balls. Arrange the balls on a tray and place them in a fridge to set for at least 30 minutes before serving. You can store the date balls for a week in a refrigerator.
